Ingredients

  • 2 cans whole kernel corn
  • 2 eggs
  • 2 cups gluten free self raising flour
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt

Method

  1. Drain the corn reserving the liquid. Put the corn in a bowl with the eggs and mix with a fork
  2. Add about 1.5 cups corn liquid and the sifted dry ingredients and stir un dry ingredients are damp and the mixture is of batter like thickness. DO NOT OVER MIX
  3. Drop tablespoonfuls carefully into hot oil about 5mm deep, and fry until golden brown.
  4. Dry on paper towels and serve warm.
