Ingredients
- 375g courgettes
- 1 large onion
- 3 rashers of bacon
- 1 cup gluten free flour
- 1 tsp baking powder
- 1 cup oil
- 5 eggs
- 1 cup cheese grated
- Salt and Pepper
Method
- Top and tail courgettes, then grate. Peel and chop onion. Dice bacon
- Sift flour and baking powder into a bowl.
- Combine eggs and oil, beating lightly with a fork, add to dry ingredients.
- Add courgette, onion, bacon, cheese, salt and pepper. Mix well
- Pour into a well greased pie dish.
- Back at 180C for 40 minutes until risen and golden
