Ingredients

  • 375g courgettes
  • 1 large onion
  • 3 rashers of bacon
  • 1 cup gluten free flour
  • 1 tsp baking powder
  • 1 cup oil
  • 5 eggs
  • 1 cup cheese grated
  • Salt and Pepper

Method

  1. Top and tail courgettes, then grate. Peel and chop onion. Dice bacon
  2. Sift flour and baking powder into a bowl.
  3. Combine eggs and oil, beating lightly with a fork, add to dry ingredients.
  4. Add courgette, onion, bacon, cheese, salt and pepper. Mix well
  5. Pour into a well greased pie dish.
  6. Back at 180C for 40 minutes until risen and golden
